Salt is both an essential ingredient of our diet and, when consumed in excess, may be a significant health hazard. Excess consumption of sodium can increase blood pressure, and is associated with a higher risk of cardiovascular disease, congestive heart failure and kidney disease, according to the overwhelming consensus among scientists and the government agencies charged with protecting the nation’s health.
