Plaintiffs are current and former hourly employees in the slaughter and fabrication operations of a beef-processing plant in Greeley, Colorado, now owned by JBS USA, LLC (JBS). Employees on the slaughter- line kill the cattle and disassemble them into sides of beef; employees on the fabrication line cut the sides into various beef products.'
