In the fall of 1869, Oscar D. Young, and twelve other persons, formed an association under the name of the Smithtown Cheese Company for the purpose of manufacturing cheese in a factory. As a part of the original agreement under which the association was formed, they adopted a constitution for their government in carrying on the business of the association.
